Pumpkin Spice Latte Cake

It was my birthday last weekend! We went to Whistler and had a lovely airbnb weekend with our friends. The weather was perfect, and we really enjoyed ourselves. Think friends, cuddles, connection and lots of FLUSTER (the most amazing card game- look it up!).

Me, Shane and Maddie had a great little road trip on the way home, exploring Brandywine Falls and Brittania Beach!

I had a little get together this weekend with some of my closest friends. My goal was a cozy, Fall themed night. Think campfire, mulled wine, and pumpkin spice. So for my own birthday cake, I created a pumpkin spice latte cake! My favourite things are: coffee, pumpkin, and chocolate; and I aimed to make a cake that included all of these things! Sometimes I think my most successful cakes are the most random mix of flavours I can find. This cake fits the bill, it’s a mix of everything, and it’s so good!

Ingredients:

Cake:

1/2 cup coconut oil, or any vegetable oil

2 eggs

1/2 cup white sugar

1 cup brown sugar

1 tsp vanilla

1 can pumpkin

2 1/2 cups flour

2 tsp baking powder

2 tsp baking soda

1 tbsp cinnamon

1 tbsp ground ginger

1/2 tsp cloves

1/2 tsp nutmeg

1 tsp salt

1/2 cup milk

1 cup chocolate chips

Icing:

1 cup butter

3 cups icing sugar

2 tbsp instant coffee

3 tbsp whipped cream/coffee cream

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp ginger

pinch of salt

Directions:

1.) Take out two 8 inch cake pans, grease them, and preheat your oven to 350.

2.) Melt your coconut oil, and add brown sugar, white sugar, eggs and vanilla. Beat until fluffy and combined.

3.) Add your can of pumpkin and beat.

4.) Combine flour, spices, baking powder and soda, and salt.

5.) Gradually add your flour mixture, alternating with the milk until the batter is combined. Add your chocolate chips (you can always add more than a cup!)

6.) Divide batter evenly between your two cake pans and bake for around 30 mins, until a cake tester comes out clean.

7.) Prepare your icing. Beat your softened butter and gradually add the icing sugar. Combine your cream and instant coffee, and add the cream and coffee mixture, spices, salt and vanilla. Beat until whipped and creamy!

8.) Once your cakes are cooled, ice! Place your bottom layer down, ice it, and place the other layer on top! Cover the rest of your cake in buttercream.

9.) Enjoy!!
